Peptides are water-soluble, and possess a high melting point. They also have lower molecular weight and fewer secondary structures. Additionally, they have a higher number of ionizable and hydrophobic groups than native proteins. Peptide bonds are durable, highly kinetically stable, and high activation energies are required in order to break its bonds. Peptide bonds are typically covalent bonds that are also known as amides. These bonds can remain intact after over a thousand years if no enzyme breaks it down.
